Here are few of my favourite recipes.

"Kadhi" Red lentil and besan (V)

Ingredients:
Water
Red lentils 180g
* Yoghurt 350m or 350g
* Besan Flour (Chickpea flour) 4 tbsp
* Ground coriander 2 tsp
* Ground Cummin 2 tsp
* Ground turmeric 1 tsp
* Fresh ginger rasped 4 tsp
* Garlic rasped 2 cloves
* Salt 1/2 tsp
* Sugar 2 tsp
* 1 fresh chili split
# Butter 4 tbsp
# Asafoetida 1/2 teaspoon
# Brown mustard seed 2 tsp
# Cummin seeds 1 tsp
Fenugreek (Methi) leaves 1 tsp
Curry leaves 30
Chilli flakes 1/2 tsp

Method:
Mix red lentils with 1600ml of water, bring to a vigourous boil for 1 minute then remove from heat and allow to cool at room temperature.  When cool drain well.

In a seperate bowl mix items marked * with cooked red lentils and 700ml of water.

Heat butter in a small pan until it froths, and add items marked#. When it smells 'nutty' remove from heat and immediately add fenugreek leaves, curry leaves and chilli flakes. Stir well.  Add this to the yoghurt/spice mixture, return to a simmer, partially cover with lid and gently simmer for 10-15 minutes.
